Tortellini Salad

I PKG Tortellini stuffed with parmesan

8 chicken breasts or 2 rotisserie chickens or smoked chicken is the best!

2 cups green seedless grapes sliced in half

1 cup snow peas (fresh un cooked) sliced in half

½ pound fresh spinach torn in bite size pieces

2 cups celery with leaves chopped

4-5 green onions with tops

1 cucumber (optional)

¾ cup raisins (optional)

1 can water chestnuts sliced

12 slices thick cut bacon, cooked cut in 1 ½ inch pieces

Mayo ¾ cup

Wedge of fresh parmesan cheese- grated 2/3 cup

½ cup fresh squeezed lemon

Mushrooms

Cook tortellini according to directions

If using chicken breasts cook for 1 hr at 350® , if not debone the 2 rotisserie chickens

Make dressing with ¾  cup mayo, 2/3 cup parmesan, ½ cup lemon juice, ½ tea salt and pepper

Mix together all other ingredients in big bowl

Good hot or cold!
