1 jar (7 oz) pimiento stuffed green olives, drained
1 can (5 ¾ oz) pitted black olives, drained
2 roma tomatoes, cored and seeded
2-3 garlic cloves, minced
2 T Olive Oil
2 t red wine vinegar
1 pkg (4 oz) feta cheese, crumbled
Coarsely chop the olives and tomatoes. Combine all ingredients in a large mixing bowl, mix well. Chill until ready to serve.
This is a great party or tailgate dish, serve with pita chips.
