Sausage and Bean Soup- Cammie

3/4 lb. bulk Italian Sausage (you can use sweet, mild or hot, depending on your taste.)

1/2 cup chopped onion

1 minced garlic clove

1 15 1/2 oz can butter beans rinsed and drained (cannellini beans or white kidney beans also work well)

1 15 oz can black beans rinsed and drained

1 14 oz can diced tomatoes

1 14 1/2 oz can beef broth (I use chicken broth and vegetable broth also work very well.)

1 Tablespoon minced fresh basil or 1 tsp dried basil

2 Tablespoon shredded parmesan cheese

Brown sausage, onion and garlic in stock pot until sausage is browned.  Drain sausage and add beans, tomatoes, broth and basil.  Cover and simmer for 10 minutes.  Sprinkle each serving with parmesan cheese.  Enjoy!
