Red Beans & Rice

“got my red beans cooking….” Muddy Waters

1 lb dry red beans

1 onion chopped

1 green pepper chopped

3 cloves garlic, minced

2 boxes chicken broth

1 can cream of chicken

Sausage or meaty ham bone (I used Conecuh brand from kroger, and I used spicy- it was awesome)

1 bunch green onions chopped

Dash or 3 of wostershire

1 pkg Zatarans red beans and rice seasoning

In a large pot, cover beans with 3 times the water, bring to a rolling boil. Boil for 10 min. Remove from heat and cover. Let sit for 1 hour. Drain.

Add all ingredients to Crock Pot. Cook for 6-8 hours on high or 10-12 hours on low or until ready. Crock pots are so funny. You just kind of have to test it out.  Serve with Rice and crusty bread. It is delicious!
