Chicken Jambalya

1 cup chopped onion

1 cup chopped bell pepper (1/2 red and 1/2 green)

2 cloves garlic minced

2 tbsp olive oil

1 lb smoked sausage cut in bite sized pieces

1 cup diced ham

1 cup cooked chicken

2  16 oz can tomatoes

1 1/2 cup chicken broth

1 cup raw rice

1 tsp salt

1/8 – 1/4 dried thyme ( very strong herb)

2 tbs parsley (dried will work)

Saute onion, peppers, and garlic in oil until tender.  Add sausage, ham, and chicken and cook for 5 minutes.  In a very large bowl combine rice, tomatoes, chiken broth, salt, thyme and parsley.  Add cooked vegetable and meat.  Stir to combine and put into a greased casserole.  Bake at 350 covered for an hour. 

(Kate Scott said it took hers almost 2 hours to cook.  Probably depends on size of your casserole dish).
